Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the chocolate chips until evenly distributed throughout the dough.
Press two-thirds of the dough into the prepared sheet pan, creating an even layer.
In a small bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Spread the cream cheese mixture evenly over the dough in the sheet pan. Drizzle the caramel sauce on top.
Take small portions of the remaining cookie dough and flatten them slightly with your hands. Place them on top of the cream cheese and caramel layer, covering as much surface area as possible.
Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
Allow the bars to cool completely in the sheet pan before cutting into squares or rectangles.
