diced pineapples (for stirring in the popsicle mix.)
Instructions
In a blender or food processor, 2 cups pineapple chunks¼ cup mint leaves¼ cup mint leaves¼ cup honey ½ cup coconut water1 tablespoon lime juice
Blend the ingredients until you have a smooth and creamy mixture.
Taste the mixture and adjust the sweetness level by adding more honey or maple syrup if desired.Adding optional ingredientsAt this point, you may fold in some Coconut milk and diced pineapples
Pour the mixture into popsicle molds, leaving a little space at the top for expansion during freezing.
Insert popsicle sticks into the molds, making sure they are secure in the mixture.
Place the popsicle molds in the freezer and let them freeze for at least 4 hours, or until fully set.
Once the popsicles are frozen, remove the molds from the freezer and run them briefly under warm water to help release the popsicles.
Gently unmold the popsicles and serve immediately.
Notes
For a smoother texture, you can strain the mixture through a fine-mesh sieve before pouring it into the popsicle molds. This will remove any fibrous bits from the pineapple and mint leaves.
If you prefer a sweeter popsicle, you can add more honey or maple syrup to the mixture. Taste the mixture before freezing and adjust the sweetness level to your liking.
To add an extra layer of flavor and texture, consider adding small chunks of fresh pineapple or shredded coconut to the popsicle molds before pouring in the mixture.
If you don't have popsicle molds, you can use small paper cups or ice cube trays as an alternative.
To prevent ice crystals from forming on the popsicles, make sure the mixture is well blended and that there are no air pockets in the popsicle molds before freezing.
