Notes
STRAWBERRIES- use any type of strawberries fresh OR frozen. While using frozen, reduce the water to ½ a cup
SUGAR - the sugar amount can be adjusted, start with the amount given in the recipe and you can go upto 100 grams. If using coconut sugar, the colour will be a little dull. But thats ok.
CONSISTENCY - you can adjust the compote's consistency. by reducing the water. for thicker compotes (for cake fillings) while cooking. To adjust consistency and make it more like a syrup, then add in a few tablespoons of hot water.
other tips
If using frozen strawberries, there is no need to thaw them. And eventually will need lesser water.
Chop strawberries in equal sized pieces. Looks good and cooks evenly. You may want to make it chunkier by chopping into chunkier pieces. Any size is good.
Always mix corn starch with water, and then add that to the strawberries. Adding only the cornstarch directly will give lumps.
Over cooking the compote, will make a thick lumpy compote. so just about 5 to 8 mins is just fine.
While cooking, mash some strawberry chunks and you are stirring. This will release some juices from the strawberry and add to the flavour.
