Step 1 - Prepare the Raspberry Puree:Wash the 2 cups raspberries under cold water and pat them dry with a paper towel.
In a blender or food processor, add the raspberries and blend until smooth and liquid-like. If you prefer a seedless puree, strain it through a fine-mesh sieve.
Step 2 - Mix the Ingredients:In a mixing bowl, combine the raspberry puree, 1 cup vanilla yogurt2 tablespoons honey1 teaspoon vanilla extract
Stir the mixture until all the ingredients are well incorporated, and you have a smooth and creamy consistency.
Step 3 - Fill the Popsicle Molds:Carefully pour the raspberry yogurt mixture into popsicle molds, leaving a small gap at the top to allow for expansion during freezing.
Gently tap the molds on the counter to release any air bubbles and ensure the mixture settles evenly.
Step 4 - Insert Popsicle Sticks:Place the popsicle sticks into the center of each mold, ensuring they are upright and securely embedded in the mixture.
Step 5 - Freeze the Popsicles:Transfer the filled popsicle molds to the freezer.
Allow the popsicles to freeze for at least 4-6 hours or preferably overnight until they are solid and set.
Step 6 - Unmold and Serve:To unmold the popsicles, run warm water over the outside of the molds for a few seconds. This will help loosen the popsicles.
Gently pull the popsicles out of the molds one by one and place them on a serving plate.
Notes
For a creamier texture, you can use Greek yogurt instead of regular yogurt. It will add a rich and thick consistency to the popsicles.
If you prefer a sweeter taste, you can adjust the amount of honey to your liking. Taste the mixture before freezing and add more honey if desired.
To make these popsicles vegan-friendly, use dairy-free yogurt and substitute honey with agave or maple syrup.
For a visually appealing effect, you can add a few whole raspberries to the molds before pouring in the raspberry yogurt mixture.
If you have leftover raspberry yogurt mixture, you can store it in an airtight container in the refrigerator for up to 2 days and use it to make more popsicles later.
To prevent the popsicles from sticking to the molds, avoid overfilling the molds and do leave some space at the top for expansion during freezing.
You can also customize these popsicles by adding other fruits like blueberries or strawberries for a mixed berry twist.
