THIS AIR FRYER SAMOSAS RECIPE
AS MUCH AS I love my desserts, I personally love savories as well. So what is a party or an occasion without Starters and appetizers.
These Air fryer Samosas are just the right idea for party savory bakes.
- Are typical Punjabi samosas that are small, like bite-sized. filled with a medium spicy sauteed potato filling
- Baked not fried; but the same taste
- Suitable for the low-calorie and health-conscious
- uses very little oil.
- Perfect as appetizers or starters for parties, game night snacks, movie night snacks, and birthdays.
- All the deliciousness minus the calories
INGREDIENTS FOR THE SAMOSA
FOR THE DOUGH - you will need
- All purpose Flour - any all purpose flour will do. No wheat flour. Just plain all purpose flour
- Melted room temperature butter / Oil - the flour to fat ratio is 2 cups : ¼ cup oil
- Salt to taste
- carom seeds (ajwain) OPTIONAL
- Water as required - water is needed for kneading the samosa dough. you will use water as required.
FOR THE SAMOSA FILLING - to make the potato stuffing to fill the samosa pockets
- Boiled and mashed potatoes - buy nice firm potatoes, Boil them in pressure cooker. or you can boil them in a steamer. Peel and then mash
- oil/ghee for tempering
- Cumin Seeds
- Cumin Powder
- Red chili Powder /Kashmiri/paprika powder
- Amchur powder
- Fresh Coriander - chopped for garnishing

- Air Fryer - I like the range Philips have to offer in terms of their sizes and options
- bowls for mixing
- Pastry board or Silicone mat or chapati chakla(used for making Indian Rotis and chapatis)

PREPARATION TO MAKE AIR FRYER SAMOSAS
The process of making the air fryer samosa however remains the same, as making traditional Punjabi samosas just the final step will differ, instead of deep frying, these samosas will be air fried.
So, to make this samosa, This is the best flow of work I have come up with -
- To start with, first boil the potatoes, peel, mash, and set them aside.
- Then move on to making the dough for the samosa - The dough will need to rest for at least 20 mins. before filling and shaping the samosas.
- And while the dough is resting make the potato filling for the samosa. - Its an easy simple filling just takes about 5 mins to make And while that is on the counter cooling move on to the next step
- The next stage is making the samosa pockets.

Tips To Make the Perfect flaky crispy Air fryer samosa
To make the air fryer samosa dough pastry. It starts with the flour, mixing and the consistency and frying them. careful and meticulous approach helps in giving the right results
1. Flour and Fat ratio
The Flour and fat ratio is an important factor in making these samosas flaky and crispy. The Right amount of fat to flour is what is needed to make the samosas crispy and flaky. So the right ratio is
All purpose flour: Fat ( oil, ghee, butter)
250 grams( 2 cups) : 60 ml ( ¼ cup )
1 kilo ( 4 cups) : 240 ml (1 cup)
2. Fat Temperature - So what temperature should the fat be?
For the fat, you may use oil ghee, or butter. It is important that the oil or any fat remains at room temperature and liquid state.
Butter or ghee can be melted and brought to room temperature and then use it. Using hot fat brings bubbles to the dough and your outer samosa will have bubbles on it.
3. Mixing the dough and consistency -
The dough for samosa should be firm, not soft. The soft dough does not give crispy samosa
First to make the dough - dry rub all the dough ingredients except the water. The flour, later on, should resemble bread crumbs
Then add water little by little to make a firm dough.
4. Shaping the Samosas
Another important tip for the perfect samosa is to roll the dough to about 1mm to 2mm thickness.
This means, when you roll the dough it should be a little thick. Making it too thin will burn the edges or too thick will not let it cook thoroughly.

HOW TO AIR FRY SAMOSAS ?
To Air fry samosas, depending on your particular brand of air fryer. This slightly differs .
Some Air fryers require preheating while others don't need.
For Air fryers that need preheating - preheat at 180degC or 350degF. and bake for 12 to 14 mins.
On other Air fryers - bake at 180C/350F for 12 to 14 mins
CAN YOU BAKE SAMOSAS IN THE OVEN?
Yes Samosas can be baked in the oven
Preheat the oven at 180degC/350degF/Gas Mark 4. for about 15 mins
Bake in the center middle rack for 15 to 18 mins. or until it is golden brown.
SERVING SAMOSAS
Samosas are best served hot, with Mint Chutney And Dates sweet Chutney or simply Tomato Ketchup.
Lay them in platters, bowls or chip and dip tray
Beverages or drinks with samosas - The best pair is the Indian Chai
HOW TO RE-HEAT SAMOSAS
To Reheat samosas, either use an oven or an air fryer.
For the Oven - preheat at 180C/350F and then heat for 10 mins.
In an air fryer - heat for 5 mins at 180C/350F
WANT TO MAKE AIR FRYER SAMOSAS FOR A CROWD ?
Mini or Bite Sized samosas are best served for crowd as appetizers or starters for a party.
SO, to make this for a large crowd, prepare everything as per the steps. Including shaping the samosas.
Make the samosas shapes, store in the refrigerator/freezer in an air tight box or covered. Leave the air frying step just before serving them.
To fry frozen samosas, let it thaw in the refrigerator before frying or baking.

Can samosas be frozen?
Raw assembled and shaped samosas can be stored in an air-tight container and be frozen. RAW FROZEN samosa stays well frozen for close to 3 months in the freezer.
The samosa dough and filling can be refrigerated to be made later. However, I do not recommend freezing them
So how do you fry frozen samosas.
Thaw them overnight in the refrigerator and then either fry , bake or air fry

Air Fryer Samosa
Equipment you will need
Ingredients
For the samosa dough
- 250 grams all purpose flour
- 60 ml oil ((ghee or butter) melted and room temperature)
- ½ teaspoon salt
- 1 teaspoon carom seeds
- 120 ml water (required as needed.)
for the samosa filling -potato stuffing
- 3 medium potatoes (boiled, peeled and mashed )
- 1 tbsp oil
- 1 tsp Cumin seeds
- ½ tsp Red chilli powder (paprika or cayenne )
- 1 tsp salt
- 2 tbsp coriander/cilantro (chopped )
For Air Frying
- Oil for Brushing and greasing
Instructions
- Boil Potatoes, peel, mash and set aside.
MAKING THE SAMOSA DOUGH
- In a medium bowl, add the flour, salt, carom seeds and oil.
- Use your hand, mix all the ingredients, so as to form crumbs. Note: Here the flour should resemble bread crumbs. Make sure all the fat has mixed thoroughly.
- Add Water little by little and make a stiff firm dough. Note: It is very important to add little every time you knead. 1 tablespoon at a time. Make sure your dough doesnt get soft.
- Once finished, cover the dough and let it rest for atleast 20 to 30 mins.
MAKE THE POTATO FILLING
- On medium flame, heat a pan, add oil, splutter cumin seeds, then add salt, chili powder.
- Then add in the mashed potato, mix well so all the salt and chilli powder is blended well.
- garnish with chopped cilantro. Mix and transfer to a bowl. Let it cool set aside.
ASSEMBLY & SHAPING
- Make small ball out of the samosa dough
- Roll it out into small discs of 4 to 5 inch rounds. with about 1 to 1.5 mm thickness
- Cut them across with a knife, to get 2 semi circles.
- Now Bring one corner of the semi circle to the center bottom. Then bring the other, and paste it over lapping the other. (check the video and step by step) This will form a cone
- Fill the potato stuffing in the cone. Then seal with the help of water and some pressing.
- Repeat for the remaining.
AIR FRYING THE SAMOSAS
- Brush little oil at the bottom of the air fry vessel. place the samosas.
- Lightly brush the samosas with oil
- bake in the airfryer at 180°C/350°F for 12 mins.
- Serve hot with any chutney, sauce or dip of your choice.
