How to make Red velvet Truffles
I totally love this idea of using up leftover cake to make cake truffles. So for these Red velvet truffles, I used up my mini bundt red velvet bundt cakes that were leftover. Or you may use Red Velvet Loaf Cake. Any of those are just perfect.
Alternatively, you may use a boxed Red Velvet cake mix. Where you can bake the cake according to the packet instructions, cool it completely, and then make the cake truffles
Ingredients you will need
But, these truffles can be the easiest when you have some leftover cake and frosting.
For this recipe, I used some leftover red velvet cake and some softened cream cheese.
So you will need
- Cake crumbs - baked and crumbled red velvet cake. Or Left Over Red Velvet Cake crumbled.
- Cream Cheese Frosting
- White Chocolate
but I prefer using softened cream cheese because the white chocolate coating is sweet, so just using cream cheese will give the right balance of flavors.
Instructions On How to Make ?
- Just break the cake into fine crumbs either with a fork or with a hand. Add in the cream cheese and mix well with a spatula.
- Roll into truffles, place it on a lined baking sheet, and place it in the refrigerator.
- Then melt white chocolate or any chocolate - dip and let it sit for some time.
- Drizzle and pipe some melted chocolate and top with some sprinkles or cake crumbs.

Swaps, substitutes and other dipping ideas for Red Velvet Truffles
For binding
You may use cream cheese, white chocolate ganache or buttercream. The idea here is some frosting to bind the cake crumbs so that it forms a ball.
What you cannot use is whipped cream or fruit compotes or something that has high water content.
For dipping and enrobing
You may use melted or tempered chocolate.
White Chocolate
Milk chocolate

For decorating
Melted chocolate – drizzle melted white, or dark or milk chocolate.
Decorate them with colored sugar, sprinkles, chocolate sprinkles.
Can you make these truffles ahead?
yes, this is a perfect make-ahead dessert. Suitable for a lot of occasions.
From valentines day, to food gifts, to birthday parties.
Storage and Shelf Life
So how long do these truffles stay good? – For about 1 week when refrigerated.
I would not recommend freezing. Because of temperature fluctuations, the truffles will start sweating and you do not want that.
Make the truffles, dip them in chocolate, decorate. Let it set well. Then pack in airtight containers using mini cupcake liner or truffle holders. That way, the truffles will not stick to each other.
you can use a variety of packing ideas like pouches, boxes, and tins. These also make for a perfect food gift.
Recipe Yield
An 8-inch cake will give around 20 - 24 truffles.
But the size and number of truffles totally depend on the size of cake you bake, the size of the truffles themselves.

Red Velvet Cake Truffles Recipe
Ingredients
- 2 cups Red Velvet cake (left over cake made into crumbs )
- ¾ cup Cream Cheese (softened)
For Dipping
- 1 cup white chocolate (melted - any type of your choice )
Instructions
- Line a cookie sheet or a baking tray with parchment paper. Set aside
- In a mixing bowl, add the cake crumbs, and half of the frosting. Mix using a spatula. Make sure the cake crumbs and the frosting come together and bind. Note: You may use little or more frosting as per requirement. The main idea here is to be able to bind so as to make truffles out of it.
- Use a small scoop or a tablespoon, scoop out and make small balls. Line them on the cookie sheet. Put it in the refrigerator for about an hour before dipping them in chocolate.
- Bring the truffles out of the refrigerator. Melt Chocolate. Dip the cake balls into the melted chocolate, shake off excess chocolate and line them back on the cookie sheet/baking tray. Let it set completely. Put it in the freezer for about 10 to 12 mins
- Using the remaining melted chocolate and pipe them on to these truffles. Note: you may use a different chocolate too, to pipe and decorate these truffles. like white or milk chocolate or coloured white chocolate.
Notes
- The number of truffles, will depend on how big each of the truffles are.
- Do not use whipped cream as your frosting, it will be too moist to bind and form balls.
