Bananas, perform a huge variety of functions in baking. And all because of it natural properties. Let see what bananas do in baking
- Sweetness : It elevates natural sweetness in a baked item. So perfect, to include in vegan bakes or any low sugar bakes.
- Naturally binds ingredients, and so helpful in gluten free baking.
- Egg Replacer - In a cake you can substitute an egg with bananas.
- Helps in adding moistness to the baked item.
HOW TO PREPARE BANANAS FOR BAKING.
Now we know, how to buy, store and ripen bananas at home. To bake, the bananas need to be prepped.
- IF USING OVERRIPE ROOM TEMPERATURE BANANAS/OVEN RIPENED BANANAS- so if there are super ripe ones that you want to use it right away for making something then - You need to peel their skins off. Put them in a bowl, mash using a fork or you can even use a hand blender like this one for a smoother mash
- IF USING FROZEN PEELED BANANAS - Let them thaw, at room temperature. The best thing to do is, to remove it from the freezer well ahead before you plan to use them. Thaw overnight in the refrigerator, and let it sit on the kitchen counter atleast an hour before you bake . Once it is in room temperature, then mash them with no lumps and then use it.

HOW TO MEASURE BANANAS FOR BAKING ?
Since, this fruit, comes in a huge variety of sizes, always measure them by volume or weight.
I prefer and completely recommend to use weight as a measure.
Some recipes specify number of bananas to be used, they can only be approximate, however for precise measure always mash and then measure

DO's & DON'Ts While Using Bananas For Baking
- Do not start with fresh bananas, they are just not right for baking. Always go for over ripe ones.
- Never store mashed bananas, always store bananas as a whole,peeled and frozen. Once mashed, use it quickly in your recipe.
- long bananas are generally sweeter, so opt for them
- While mashing, make sure it is smooth with no lumps, otherwise you will end up having banana lumps in your breads or muffins
- Always measure your bananas correctly by weight.
- I do not recommend using fully black bananas. Some use it. but i do not recommend, because black bananas are almost on the verge of spoiling.
