How to make Marble pound cake from scratch
Ingredients you will need
- Flour - just all purpose flour here. No other substitutes.
- butter - room temperature unsalted butter is all you need. If using salted, then omit the salt in the recipe
- sugar - fine granulated white sugar, no brown nor any other kind of sugar
- Eggs - Large whole eggs here.
- Cocoa powder - plain unsweetened good quality cocoa powder. processed or pure anything is fine here
- milk - room temperature whole full fat milk
- leavening agents - baking powder and baking soda used here.

Can you make this chocolate marble cake eggless ?
Yes you can absolutely make this cake eggless
Swap the amount of Eggs with butter milk
1 egg with 60ml/4tbsp buttermilk
And omit the whole milk in the recipe
Mixing, Marbling & Baking This Chocolate Swirl Cake
To start, always room temperature ingredients. Measured and kept in place
Cream butter and sugar, until pale and fluffy. Add eggs one by one or buttermilk. and milk
Then sift in flour leavening agent and salt. Fold until you get a smooth batter

For the Chocolate batter,
Remove one ¾ cup of batter to a bowl, sift in ¼ cup of cocoa powder add 2 tablespoon of milk. whisk and set aside
How do you make a marble effect cake?

So how do you marble pound cake ?
- First layer the bottom of the loaf pan with vanilla pound cake batter(the white batter)
- Then add in few spoons of chocolate batter scattering over the vanilla cake batter.
- Then add in the second layer of vanilla pound cake batter. Repeat.
- You continue this until ¾ of the pan is filled.
- After the final layer. Use a skewer or a tooth pick to swirl. Just random round movements
- Tap to release the air bubble.
- Bake in a preheated oven until the center is baked and tooth pick comes out clean.
- Let it cool before serving
How long to bake in the loaf pan ?
Any batter in a loaf pan will need to be baked for a longer time, considering the depth of the pan. It will take a while to bake. SO I suggest using low temperature and a longer time.
For this recipe - i recommend 170deg c/340degF baking for about 50 to 55 mins - but check in between. In case the top is browning too much cover it with foil and bake longer.

Is loaf cake the same as pound cake?
A loaf cake can be any kind of batter that can be baked in a loaf pan, even a quick bread is baked. And not necessarily that every loaf cake is a pound cake. It only refers to the type of cake corresponding to the pan it is baked in

Storing & shelf Life
Marble cakes are best stored at room temperature and stays well for about a week
However, you can refrigerate it for more than a week. Frozen pound cakes stay good for atleast 2 months.
To Freeze pound cake either slice them or store them as a whole loaf.
You will have to thaw them to room temperature before serving refrigerated or frozen pound cake
So how do you thaw frozen cakes
You will bring it to the refrigerator overnight. And let it thaw there.
Then bring it out to room temperature for atleast 1 hour before serving

FOR THE VANILLA POUND CAKE BATTER
- 250 grams unsalted butter
- 250 grams white granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 300 grams all purpose flour
- 2 teaspoon baking powder
- ½ tsp baking soda
- 100 ml whole milk
Batter for the chocolate swirls
- ¼ cup cocoa powder
- 4 tablespoon hot water
For Eggless Marble loaf cake
- 240 ml buttermilk
Instructions
- Preheat the oven at 170ºc/340°F. Grease and line a 9x5 loaf pan or any standard size loaf pan.
- In a medium bowl, whisk flour, salt, baking powder and baking soda. Set aside
- In a large mixing bowl, tip in room temperature butter and sugar Using an electric beater or a stand mixer with a paddle attachment, cream until pale and fluffy.
- Now add the eggs one after the other. mixing well at each addition on low speed. Add the vanilla extract. Note: The batter may look curdled. Nothing to worry, its the emulsion in processFor eggless adding buttermilk - You may add the entire buttermilk and whisk until well blended and skip out the milk in the recipe.. all other ingredients remain same.
- Add in the flour. mix on low speed. Use a spatula to scrape the sides of the bowlThis helps in getting to the bottom of the bowl and makes sure that the batter is not over mixed and no flour is left off
- Add milk in the last and give one final mix with the beater or the mixer on low speed. stop the mixer.
- This is your base vanilla batter
MAKING THE CHOCOLATE BATTER
- Remove ¾ cup of vanilla batter. To that sift in , 45 grams or ¼ cup of cocoa powder. Add 2 tablespoon of hot water. This is your chocolate cake batter. NOTE : Adding hot water will bloom the cocoa powder and give a nice deep chocolate and fudge taste to the chocolate swirls
CREATING THE MARBLE EFFECT
- First layer the bottom of the loaf pan with vanilla pound cake batter(the white batter)Then add in few spoons of chocolate batter scattering over the vanilla cake batter. Then add in the second layer of vanilla pound cake batter. Repeat. You continue this until ¾ of the pan is filled. After the final layer. Use a skewer or a tooth pick to swirl. Just random round movements
- Tap the loaf to release any large air pockets. Place in the center rack of the oven. Bake for 50 mins. Mine took about 46 minsNOTE: baking time depends on your individual oven.So keep a check on doneness.
- Remove from the oven and let the cake sit in it for about 10 mins. Then de mould the pan and place the loaf on a wire rack to cool completely
- Use a serrated knife to slice the loaf when it is completely cool.
