How To Make Oatmeal Cocoa Walnut Muffins From Scratch
This Recipe is based on my other oatmeal muffin recipe, and it so simple and easy to make. A quick run into what we need here.
Ingredients you will need
This muffin and most of all the recipes you will find in this blog, use the simplest of ingredients, which is just off your pantry.
- oats - quick oats are the best here.
- All purpose flour or whole wheat flour - can be used if you want to omit the refined all purpose..The result will be a slightly denser muffin, but the taste is absolute spot on. But I stuck with All purpose Flour.
- Cocoa - simple plain Unsweetened cocoa is what we need here
- Sugars - Brown and White Sugar. I love using brown sugar in all my recipes, it gives in that warm, caramel nut taste and that moistness, while the white sugar lends in a good structure.
- Eggs - whole large eggs for all that richness in the flavour and moistness &
- milk - is what makes the oats into oatmeal and adds moistness to the muffins
- Canola oil - this muffin recipe, has no butter so any oil that has no odour will do good.
- Leavening agents - baking powder
- Mix ins - I have used walnuts, you can use chocolate chunks, chips, pecans or macadamia.
So are they any
substitutes for oatmeal cocoa muffins
All Purpose Flour With Whole Wheat flour - swap all purpose flour with whole wheat flour - measure sieve and use it.
For a Gluten Free option -use almond flour or gluten free substitute flour at 1:1
egg replacement - in this recipe you can use yoghurt
For lactose intolerant/vegan - use same quantity lactose free milk & coconut, almond soy rice or oats milk
Before moving to baking make sure to keep all your ingredients at room temperature.
Mixing baking and Storing.
This muffin is easy to make, it is simple and does not need any fancy equipment. Just a bowl, whisk and spatula
And uses the very simple mixing method also called as The Muffin Method, Which involves mixing the wet into dry ingredients. a simple one bowl method
In a large bowl, whisk all the dry ingredients. In another bowl add in the all the wet ingredients. mix well.
Now add in the wet ingredients into the dry ingredients fold well or mix with an electric hand whisk.
Baking These - You will bake for about 15 mins, and then you will let it sit in the pan for about 10 mins after removing from the oven.
Storing These - Store them in air tight container in the refrigerator. And holds good for about 3 to 4 days.
OATMEAL COCOA MUFFINS STEP BY STEP
Serving These Oatmeal Muffins
Muffins are best served fresh and warm. However if storing in refrigerator, warm it up in the microwave for 15 seconds.
- These are best enjoyed with a blob of your favourite jam
- or some melted peanut butter
- some cream cheese on top.
- chocolate sauce or hazelnut sauce
- Or have it plain with a glass of milk or a hot cup of coffee.
Can you Make this Ahead ?
Yes You can make it ahead in two ways
1st way - Bake the complete muffin and store it covered in an air tight container in the refrigerator. So while serving, warm it up for about 20 seconds in the microwave. And your good to go
The Second Way which is generally what I Prefer is, Mix the dry ingredients and store it in a zip lock bag. write the wet ingredients on top of the bag. store it in your pantry. When you need to bake them, just preheat the oven, and line your pan, mix in the wet ingredients.
And your muffins will be ready in 15 minutes.
TIPS FOR BEST OATMEAL MUFFINS
- Use good quality liners for the muffins, a good thick paper muffin is the best option
- Muffins can vary in sizes, and it all depends on the size of muffin liners you use.
- Muffins need to be big enough to cover the top of the liner. So fill the batter to a little more than ¾ of the liner or up to the brim of the liner
- The crumbs need to be tender, so do not overbake.
- Bake for 15 mins. However check in between 12 & 15 mins for doneness. I recommend this because every oven is different and the time may vary plus or minus.

OATMEAL COCOA WALNUT MUFFINS
Equipment you will need
Ingredients
- 200 grams all purpose flour
- 50 grams cocoa powder
- 120 grams oats (quick cooking/instant )
- 100 grams brown sugar
- 80 grams white sugar
- 3 tsp baking powder
- 2 large eggs (room temperature)
- 240 ml milk (full fat whole milk )
- 120 ml canola oil (or any vegetable oil )
- 2 tsp vanilla extract
- 60 grams walnuts (chopped or broken into 4 quarter )
Instructions
- Measure all your ingredients and keep aside(always use room temperature ingredients)
- Preheat oven at 180°c/350°f, line a muffin pan with liners
- In a large bowl, whisk all the dry ingredients, flour, oats, sugars, baking powder. Set aside
- In another medium size bowl, whisk eggs, oil, milk, vanilla extract. Set aside
- Now add the whisked wet ingredients into the dry flour mix. Fold well using a spatula.
- Then fold in the chopped walnuts.
- Pour the batter into each of the muffin lines upto the brim of the liner or upto ¾ of the liner
- Bake for about 15 mins. Remove and let it sit in the pan for about 10 minsThen remove from the pan and let it cool completely
