How to make Biscoff Cheesecake Truffles
These biscoff truffles are also called biscoff cheesecake truffles. So the base is a cheesecake mix.
So how do these truffles taste
Simple, it's like biscoff cheesecake dunked in white chocolate.
So it has all that creamy deliciousness of a biscoff cheesecake. The caramel sweetness from the cookie butter is balanced by the tangy-ness of the cream cheese.
Just a few of them are needed here or should I say just 4. Yes, all you need is 4 ingredients and most importantly, it is one effortless dessert recipe.

Ingredients
- Biscoff Spread
- Cream Cheese - You can use Philadelphia cream cheese block if you are from the Uk or the US. In India, you may use Milky Mist, or Dlecta.
- Biscoff biscuits/cookies - Just the classic lotus biscoff
- white chocolate
And some more biscoff to the top.
To Make, Just bring together cream cheese, Crushed biscoff cookies, and biscoff spread. Mix well and form balls.
you may use the smallest cookie scoop or a melon scooper. Or just a tablespoon.
roll the truffle into balls and place on a cookie tray lined with parchment paper.
Dipping and enrobing truffles
Melt the chocolate either in the microwave or using the double boiling method. Dip the truffles in melted white or dark chocolate. carefully line them on the tray again.
Let the truffles completely set. drizzle some melted biscoff and dust some more biscoff cookies.

Storing & Serving Biscoff Truffles
Place these truffles in small truffle cup liners. Arrange them in an airtight container. Place parchment paper on top of these truffles. Arrange and another layer. Store them in a cool place at room temperature at about 24C/75F.
Warmer climates? then you need to store them in the refrigerator.
Refrigerate the truffles until the time for serving.
To Serve, Remove the truffles from the refrigerator about 30 minutes before serving.
These Truffles are best served at room temperature.

Biscoff Cheesecake Truffles
Equipment you will need
Ingredients
- 200 grams lotus biscoff cookies (crushed )
- ¼ cup lotus speculoos biscoff spread
- ½ cup cream cheese (room temperature)
- 1 cup white chocolate (chopped )
Instructions
For the Biscoff Cheesecake Truffle Mix
- Line a cookie sheet or a baking tray with parchment paper. Set aside.
- In a food processor, blitz the biscoff cookies until fine powder.
- Now, In a large mixing bowl, add these crushed cookies, biscoff spread and cream cheese
- Using a spatula, blend until it forms a thick dough like consistency. This is your biscoff cheesecake truffle mixture.Note: - you may use more or less of biscoff spread and cream cheese. The main idea here is to bring all these together to form a dough like consistency. So as to make truffles out of the mixture
- Using a small cookie scoop or a table spoon, scoop out the cheesecake mix and roll into truffles.
- Place them on the lined baking tray. Put it in the refrigerator for 20 mins or flash set them in the freezer for only 8 to 10 mins.
DIPPING/ENROBING TRUFFLES
- Take the truffles out from the refrigerator. Let it sit on the counter top. While the chocolate is melting
- Melt the white chopped chocolate. using a double boiler or in the microwave.Double boiling method In a sauce pan of simmering water. Place a larger bowl with the chopped white chocolate. Make sure the water is not touching the water. Let the chocolate melt a little. Remove from heat. Now Use a spatula, work on the chocolate. and make sure it is completely melted. It will melt with the heat that is already there. Microwave Place chopped chocolate in a microwave safe bowl. Heat in 20 sec bursts and melt the chocolate.
- Using a fork or a dipping tool, dip the truffle into the melted white chocolate. Shake off excess and place them back onto the parchment lined baking tray.
- Put the tray back in the refrigerator for 10 mins. Bring it out and serve.
Notes
- You may use more or less of biscoff spread and cream cheese. The main idea here is to bring all these together to form a dough like consistency. So as to make truffles out of the mixture
- The number of truffles this recipe gives depends on the size of each truffle. SO it may vary anywhere between 8 to 15 per recipe.
