How to Decide, Plan and Execute A Kebab Platter
Step 1 - Guests and Taste/Food Preferences.
Know How many guests are expected. And a rough guess of their taste preferences. You may have kids or adults in the group. Or maybe both. Maybe someone is on a low carb or has a food allergy. Note down all these. This is your first step. Once you have all this noted; the next step becomes easier.
Example - A group of 5, with 1 kid and no allergy, but they like an assortment of meat.
Step 2 - As an Appetizer Or Main Course. Plan platter menu. Get your recipes ready
You will next decide on whether to serve as an appetizer or as a main course what to include in your platter.
At this step, we should decide on the platter menu. You may want to include recipes that take care of the food allergy and other food preferences; that you noted down in the first step.
You may want to include only chicken kebabs or a combination of meat varieties.
For Example: Serving as an appetizer. 2 varieties of chicken kebabs, 1 kid-friendly chicken recipe like Tangdi Kebab; non spicy Afghani Kebab; Air Fryer Tandoori Chicken Kebabs or Malai kabab. 1 lamb variety and maybe one seafood kebab like tandoori fish or prawn/shrimp
Step 3 - Decide on the sides, accompaniments, and mains

If you serve it as An appetizer then a soup or drink with some chutneys, dips, and salad should do good.
To Serve as a Main Course, then include Bread, & Pulaos, and a dal(lentils), in addition to salads, dips, and drinks.
Step 4 - Procure and Preparation (at least a day before)
Once you decide on the menu the next thing is to determine, what items are going to be homemade and what you need from the store.
- Procure the meat for the kebabs and marinate.
- Prepare for the salads, keep the dressing seperate,
- Most of the dips are make ahead, so make them and store it up.
- Make the drinks/beverages and store in the referigerator.
- In case serving as a main course, make the bread dough
Step 5 - Final cooking (3 hours before Serving)
- Thread the marinated kebabs onto the skewers and start grilling on the pan or a pre-heated grill or oven.
- In the meanwhile, Bring out all other accompaniments and sides. You may want to warm certain sides before serving.
- If serving as a main course, make Rice or bread.
Step 6 - Putting the kebab platter together
- On a large board or a platter, place the different kebabs, in clusters. You may want to keep some lime wedges, onion, and cucumber slices on the platter itself.
- Serve the Chutneys and dips in smaller bowls. So guests can self serve and is easier to move them around the table
- Salads - dress the salads, just before serving. Serve them in a large bowl, so guests can take a smaller helping as and when they need.
- Then serve the Rice in a casserole and the Bread in a basket covered with a cloth.

- 4-5 varieties Kebabs - assorted made with 1½ lb of meat
- 2-3 types Dips, Chutneys and sauces
- 2 types Salads
- 1-2 Jar Beverages
Instructions
- Step 1 - Know your guests Know your guest size, taste and food preferences, any food allergy.
- Step 2 - Decide on the menu for the platterDecide on the menu - kebabs, Dips, chutneys, salads and Drinks If serving as a main course then decide on the Rice, Bread and Dal/curry too.
- Step 3 Plan and (procure 2 days before or 1 day before in the morningPlan on what you need to buy from outsideSet some time and Procure ingredients, like meat, veggies, and any other items to be bought.
- Step 4 Prepare Atleast a Day before or the previous EveningMarinate the Meat, chicken and or sea food - According to the recipe chosen, marinate the meat as per the instructions and store in the refrigerator overnight.Prepare/make the dips - most of the dips can be made and refrigerated. So make them and store them. Prepare the Salads - Chop the veggies and herbs needed for the salads. Store in an airtight container in the refrigerator. Make the Beverage Base - Make the beverage base, like if it is a mint lime mojito - Prepare the base, and store. Do not add water Get the Ice cubes ready Make sure there are ice cubes in the Freezer. You may need it for serving Prep for any main course like bread, Dal or Pulao.
- Step 5 - Final Cooking 3 hours before the party time 1. Cook the kebabs, according to the recipe you are following. Once cooked. Set aside. 2. In the mean while on another burner ,cook the main course at this point. Keep aside.2. Bring out the dips, sauces and chutneys to room temperature. Transfer to small serving bowls. Set aside.3. Prepare the salad dressing. Set aside. Pull out the salad from the refrigerator. Transfer to the salad serving bowl. 4. In a jar, to the beverage base add water or make the beverage as per the recipe you are following
- Step 6 Serving Time Arrange the kebabs in a large platter or on a board. Dress the Salad, and mix Warm the main course and the kebabs Place the Beverage pitcher too.Lay them all on the. tabl and arrange them beautifully and inviting with all the table ware like plates, spoons, glasse, forks, paper napkins.
