Baking for a big batch is definitely a little jittery if you are not used to it. These tips help a busy homemaker who wants to bake in large quantities for any party at home or for a bake sale.

Baking brownie - It's easy, but a little care and a slow step-by-step process of handling a big batch are always needed.
After making loads of brownies for commercial orders single-handedly, I have my own process. And all the time I have worked with home ovens, not large ones.
Before we start just a few things on check. Your process of baking large batches will depend on certain factors.
HERE ARE MY BEST TIPS FOR BAKING FOR A CROWD

TIP 1: Determine the number of guests
The first and foremost important step is to finalize the number of guests, you are hosting. And come with the number of brownies squares or slices you need. If you do not have this number, then you are shooting in the dark.
And then plan accordingly how many batches of brownie baking you will need to do.
Having a rough idea of how many brownies you get in each size of the pan really helps.
Keeping that in mind you may want to double triple or quadruple your recipe
TIP 2: Size of the oven and pan size, serving size, and baking time
Choose the right pan size for the size of the oven you have and determine the baking time accordingly.
Every oven and pan size requires different times for baking.
First, know the size of the oven you have. The bigger the better. Determine what size of pans fit into your oven
If you can fit in a full sheet pan nothing like it. Perfect for a big batch of bakes.
But none of the standard home ovens can fit in a full sheet pan.
A half-sheet pan is a possibility. A quarter sheet pan is also perfect for a standard home oven
Also, check what pan size you have. These are some pans i would recommend for a homemaker
A Sheet pan ( quarter or half)
A tray bake pan
A square pan maybe 2 of them
So I generally use an 8x8 pan. The simple reason being, time logistics.
So why do I use an 8x8 pan, -
Bakes faster,
Can cut equal bars.
So your oven size, pan size, servings, and the number of brownies required for your occasion. are the basic details you need.

TIP 3: Time for the event/occasion/party/potluck
If you have to make a large batch, plan well in advance. You should start baking at least a complete 24 hours in advance. PLANNING IS ESSENTIAL HERE. because batch baking is done with meticulous planning and execution.
It involves the repetition of steps for each batch.
Also, after a couple of bakes, your oven also needs a little rest and cooling time as well.
So plan well in advance and execute it properly.
Do a rough plan sketch and a flow chart of how you will go about .
TIP 4: DECIDE HOW ARE YOU SERVING OR PACKING THESE BROWNIES
Hosting a party or a bake sale is doable, only if you have chalked out a plan. The next thing that you need to figure out is - to decide how you are going to serve brownies or pack them.
YOu may serve them
- With chocolate sauce drizzled
- with Ice cream and warm fudge sauce and nuts
- or just plain.
Place it on a platter. Cut into large squares or small squares
SO many zillion ways you can serve these
Pack brownies in single-serve packs, or cake boxes, or 6 in a box.
Everything that you decide needs to be finalized well and beforehand.
TIP 5: RECIPE FOR A BATCH

- Make Sure you have enough quantities of ingredients while baking for a huge crowd.
TIP 6: BATCH YOUR WORK PROCESS
Here are the basic steps for baking brownies
- Grease and line pans
- Measure and prep ingredients
- Mixing the brownie batter
- Baking
- Cooling and cutting
- packing & Serving

these being the basic steps, working around it and batching some process steps helps to a great extent.
Batching your method or work process helps immensely here. Let's Go into detail here.
Generally, in a brownie recipe, the most time-consuming work is to Chop the chocolate and melt them with butter. I always start with this step And then work my way down.
- Line and grease pans - While baking for a crowd or a large batch, I suggest using at least 2 pans, so you can alternate baking between the batches. This especially helps when you have a small oven.
- First Chop Chocolate(if using bars) - Chop together, measure for each batch and place it separately in bowls
- Measure butter - Measure and place them individually in the already chopped chocolate bowls
- Measure dry ingredients and whisk. ie flour, cocoa powder salt. Whisked and placed separately for each batch.
- Preheat the oven. Melt the chocolate and butter for 1st batch. Mix and bake the first batch.
- While the first batch is almost done - may be short of 10 mins, start mixing the next batch.
- Always cool the brownies completely. Finish baking all the batches, and cut the brownies into bars.
- Store Serve or Pack them as per your preference.
This way you can bake batch by batch. but just make sure you leave a little time for the oven to cool and then preheat again and start your next set of batch
TIP 7: MAKE A NOTE OF ALL THE DETAILS
Make a clear note of all the details as mentioned in tips 1 to 6 like the number of guests, pan size and yield and how many batches, and other details that is needed. You may also make note of the general workflow, so you do not miss on the details.
This certainly helps in making large numbers like 100 pieces or more brownies. However, you can do it for any number.
TIP 8: BE A LITTLE EXTRA CAREFUL IN YOUR PROCESS
While batch baking, it can be a little daunting. it's easy to let go of or miss certain steps. Being a little cautious and careful goes a long way.
Make sure you don't miss each of your recipe steps in every batch

A slow and steady approach works best. Do not rush.
TIP 9: CUT, SLICE BROWNIES NEAT AND CLEAN
Slicing or cutting brownies into squares can be a task that can give you jitters. Even after baking 1000s of brownie squares I still get nervous.
So first cool your brownies completely. I suggest completely baking all the batches and keeping the cutting to the last.
This part will be easy once you have determined how many squares of brownies you need.
Tip 1 & 2
Use a plain sharp knife, and wipe clean after each cut. This helps in giving clean neat cuts to brownies. Sometimes dipping knife in warm water and wiping clean with a kitchen towel helps.
TIP 10: STORE BROWNIES RIGHT
While baking brownies for a huge batch, you have a big number of brownie squares to handle. Some of the best ways to store them until you need to serve or pack
Since Brownies for any occasion can be made well ahead. You may store in the refrigerator or at Room temperature (24C/ 75 F)
At Room temperature, I would suggest storing for not more than 2 days.
- large square cake boxes - These are best recommended, if you are doing a bake sale. Or for a potluck. Place them in between the parchment sheet squares, so it doesn't stick to each other. you can store it well and carry it along with you for bake sales and potlucks
- Air-tight containers - If you have large airtight containers. Nothing like it. These help, if you are hosting a party. Use parchment squares between each brownie square. After which you can transfer to a serving platter
