Baileys Chocolate Luxe Brownies
Is a thick fudge-y chewy brownie, flavored with baileys chocolate luxe and frosted with the same liqueur ganache.
So, definitely a grown-up dessert. Making them for someone? make sure they are not kids.
These are one ultimate dessert you can make for your friends on a game night or friend get-togethers, bachelorettes and so many other grown-ups-only occasions.
You can completely make these brownies ahead. So These liqueur brownies are a perfect dessert for a crowd or any occasion.

HOW DOES BAILEY CHOCOLATE LUXE TASTE?
So this liqueur is rich, and thicker than the classic Irish Cream. Creamier because of the Belgian chocolate. Has some undertones of caramel from the Irish Cream; and leaves a slightly bitter aftertaste, of the cocoa.

How To Make Boozy Brownies
First of all the hero ingredient of this brownie is Baileys Chocolate Luxe - You should find them at any good liquor merchant shop. Or just ask your friend to pick it up for you from the airport duty-free.
You will use the liqueur for the brownie batter and the ganache frosting as well... !!!
The Cocoa Brownies
The Brownie recipe is slightly based on my Cocoa Brownies I have tweaked it a little to make it a little fudgy and chewy.
Butter - unsalted butter, we need melted unsalted butter. measure, melt and then use. The butter shall be just touch to warm not hot.
Eggs - whole large eggs
Sugar - plain white granulated sugar
Flour - plain all-purpose flour
Cocoa powder - unsweetened or dutch processed cocoa powder. I have used a processed cocoa powder. For a deep rich dark colour then processed cocoa is your best pick
Salt - just to elevate your overall flavour
Any mixins - like chopped chocolate chunks, chocolate chips, macadamia, pecans, walnuts, or hazelnuts. It's just your choice. I haven't used any.

Mixing the liqueur into the brownies batter
Preparing the batter for the brownie is just the same as with other classic brownies.
To mix the liqueur - The baileys Chocolate Luxe would go in the last. So, add in the liqueur, fold in well and transfer the batter to the brownie pan. Bake them. cool and then top with ganache.
BAILEY CHOCOLAT LUXE GANACHE
Ingredients for the ganache
Semisweet Chocolate - good quality chocolate something like Callebaut, Ghirardelli, Lindt,
In India you can use - Morde, Vanleer, Callebaut
Full fat dairy Cream - just full fat dairy cream.
Butter - Unsalted butter, for an silky smooth and shiny ganache
Baileys Irish Chocolate Luxe - Flavourings of any kind can be altered according to our taste. Here you can use from about 1 tablespoon to 3 tbsp.
Make the ganache by heating the cream and then adding it to the chopped chocolate and butter. Let it sit for a while. use a spatula to mix, add the bailey chocolate luxe liqueur in the last. mix well. And let the ganache set to the consistency you want.
I've used a pouring ganache consistency. So, it can set well in the refrigerator and still not harden. Because I wanted it to set while in the refrigerator.
So I put the brownies back into the pan with the parchment paper and pour the ganache on top and let it set in the refrigerator.

CAN YOU MAKE THESE BROWNIES AHEAD ?
YES YES YES, These Baileys Irish Chocolate Brownies can be made ahead and totally perfect for entertaining.
So how to make and serve them for an occasion.
- Make these brownies completely. Let it cool.
- Make the ganache and frost the brownies.
- Store them.
- Serve these at room temperature.
STORING, SHELF- LIFE AND SERVING THESE BOOZY BROWNIES
Before Frosting: Store these brownies in an airtight container in a refrigerator.
After Frosting: Store them in the refrigerator. This recipe ensures that the ganache does not harden too much. So I suggest storing it in the refrigerator And taking it out at least 1 to 2 hours prior to serving. So you can serve room temperature brownies with the ganache set just right., Which is not too hard nor too soft.
Shelf - life of these brownies with ganache stay good for 4 days at room temperature
(24 C/ 75 F). If your room temperature is more than that, I suggest refrigerating these brownies.
SERVING IDEAS: These Boozy brownies are best served as they are, with or without the ganache. The next best thing is to pair them up with a nice cold vanilla ice cream and chocolate sauce
If you are serving brownies without the frosting, then warm them up and serve.

HOW DO YOU USE BAILEYS CHOCOLATE LUXE - Other Ways you can use this Chocolate liqueur
- Add in a tablespoon of Baileys chocolate luxe in your hot chocolate - top it up with marshmallows and there you have a decadent winter hot beverage.
- Make an espresso and add a tiny shot of this liqueur - you have baileys espresso shot.
- use them for frostings like in ganache, cream cheese frosting and so many more. I however would not recommend using in whipped cream.
- Add them to any cake batter for that extra punch.

Boozy Brownies - Baileys Chocolate Luxe Brownies
Equipment

Ingredients
For the Baileys chocolat Brownies
- 180 grams unsalted butter - measure and melt
- 120 grams all purpose flour
- 275 grams granulated sugar
- 2 large eggs
- 50 grams cocoa powder - unsweetened or dutch processed
- ¼ teaspoon salt
- 2 tablespoon Baileys Irish Chocolat Luxe
For the Baileys Chocolat Luxe Ganache
- 200 ml full fat, dairy cream
- 200 grams semisweet chocolate
- 30 grams butter
- 2 tbsp Baileys Irish Chocolat Luxe
Instructions
Make the Baileys brownie batter
- Prepare your pans - Grease and line an 8 or a 7 inch inch square pan with a parchment paper, with the sides up.
- Preheat Oven at 170°c/ 340°F. Set the backing rack to the middle.
- Measure and Melt Butter. Set aside let it cool
- In a medium size bowl, measure flour, cocoa powder and salt. Whisk and Set aside. This is your
- In a large mixing bowl, add melted butter, granulated white sugar. Using a hand whisk, beat until well blended
- Add eggs, one at a time. Whisking after each addition.
- Now fold in the flour mix. Mix until there are no flour streaks
- Add in the Baileys Irish Chocolate Luxe. Fold well.
- Transfer the batter to the prepared pan. Bake for 25 to 30 mins. or until a skewer inserted comes out with few crumbs.
- Let the brownies sit in the pan for about 20 mins. Then Transfer on to a wire rack. Let it completely cool.
Baileys Irish Chocolat Luxe Ganache
- Place chopped chocolate and butter in a bowl
- Heat Cream on medium low, let it bubble.
- Pour the cream on to the chopped chocolate. Add in the baileys Irish. Let the hot cream sit for 5 mins. Then use a whisk or spatula to mix and let all come to a smooth mixture. This is ganache.
- Let the ganache cool down at room temperature or put the ganache into the refrigerator to quickly set it.
- To Frost - Bring the ganache out of the refrigerator, whip it lightly, then use a spatula to frost the brownies.
- Cut using a sharp non serrated knife. Wiping after each cut, to get clean cuts.
